Vegetarian Pizza Salad Bowl

Serving Size: Two Hungry Adults
INGREDIENTS
2 tsp olive oil
2 tbsp red wine vinegar
2 tbsp. all natural tomato sauce, no sugar added
1 tsp dried oregano
Sea salt and pepper to taste
2 cups mixed greens
10 fresh basil leaves
1 cup cherry tomatos
1/2 medium green pepper, sliced
1/2 medium yellow onion, sliced
1/2 cup sliced mushrooms
10 black olives
4 oz. fresh mozzarella
1 pinch of crushed red pepper (optional)

METHOD
To make dressing combine the oil, vinegar, tomato sauce, and oregano in a small bowl. Whisk to blend. Season with salt and pepper if desired and set aside. 
Add a cup of baby spinach into two bowls. Top with bell peppers, tomatoes, mushrooms, olives, and basil. Top with fresh mozzarella slices red pepper and dressing and serve immediately!
