Serving Size : 2 Hungry Adults Preheat over to 375 Degrees 2 Cups Sushi Rice 2 Cups Water Start by adding your sushi rice and water into your rice cooker so that it can start cooking and stay warm while the rest of the dish is being prepared. 2 Sweet Potatoes 3 Tablespoons Olive Oil 1 Teaspoon Chili Powder Pinch of Salt & Pepper 1 Tablespoon Dried Basil 1 1/2 Cups Brussel Sprouts 2 Tablespoons Balsamic Vinegar 1 Tablespoon Honey 2 Tablespoons Olive Oil Pinch of Salt & Pepper While the rice is cooking wash and slice your sweet potatoes and Brussel sprouts and place them in two seperate bakeware dishes. For the sweet potatoes add olive oil, chili powder, dried basil, and salt and pepper to the dish. Toss potatoes to ensure they are all equally covered. For the Brussel Sprouts add olive oil, 1 tablespoon balsamic, 1/2 tablespoon honey, pinch of salt and pepper; toss. Place both dishes in oven 8 inches from the bottom and set timer for 25 minutes. They may need to cook slightly longer to get crispy. Once cooked remove the sweet potato wedges and place to the side. Add the remaining 1 tablespoon of balsamic and 1/2 tablespoon of honey to Brussel sprouts and toss. set them aside. 2 Cups Frozen Shelled Edamame Take one medium sauce pan and fill half way up with water. bring to a boil. Take out frozen edamame and place in boiling water. Cover and bring back to a boil cooking for 2-5 minutes. Drain and set aside to cool. Once they are cool enough to touch de-shell half cup and place to the side. Place the remaining edamame in a bowl sprinkle with salt and place on the side as an appetizer. 1 Pound Thin Sliced Beef 1 Tablespoon Minced Ginger 1 Tablespoon Minced Garlic 1 Bunch Minced Cilantro 3 Tablespoons Virgin Olive Oil 2 Tablespoons Japanese Grilled Meat Sauce In a medium pan sauté the olive oil, ginger, garlic, and half of the cilantro until fragrant (~ 2 minutes). Add beef and cook for another two minutes. Once the beef starts to brown add the Japanese grilled meat sauce to the pan. continue to cook until the sauce thickens. Pour off the thick sauce into a small dish to use later and place beef back on stove. Sauté on medium heat until you get slightly crispy edges. remove and set aside to cool. 1 Avocado Slice avocado in half and either fan or chunk both halves. Grab two deep bowls and shovel out desired amount of rice into each. Sprinkle with rice seasoning. Add sweet potatoes, Brussel sprouts, shelled edamame, avocado, and beef as toppings. sprinkle with more seasoning and cilantro if desired and enjoy!
